Mexican-Style Chicken Fries

French fries are an immediate crowd pleaser by themselves. No one can resist a large plate of French fries, especially when they are loaded with savory toppings.

To make these crispy fries even more irresistible, I dressed them up with some Mexican-style ingredients: shredded chicken, large dollops of sour cream and salsa, and topped with a few fresh slices of avocado.

This nachos-meets-fries recipe is the perfect dish to serve during a Super Bowl watch party. Make a big batch for people to serve themselves from, or keep the toppings out separately for a French fry bar where people can serve themselves. Either way, no one will be able to say no to these “dressed-up” French fries.

  • 1 bag of French Fries
  • 1 Chicken Breast, Baked and Shredded
  • About 1/4 cup Sour Cream
  • About 1/4 cup Salsa
  • 1 Avocado, Sliced
  • Salt
  • Pepper
  • Olive Oil

Preheat the oven to 350 degrees F. Line a baking sheet with foil and pout the whole bag of French Fries on the baking sheet. Drizzle the French fries with olive oil, and then sprinkle so salt and pepper on top. Toss to combine. Place the French Fries in the oven and allow them to cook until they are nice and crispy, about 20 minutes. (You may need to toss them ever so often while they are baking in the oven.)

While the French fries are baking, be sure you baked chicken is ready. For the chicken, all I do is place 1 chicken breast in the oven (prior to cooking the French fries) and bake the chicken until it is cooked throughout, about 20-25 minutes. Once the chicken is fully cooked, allow the chicken to cool slightly and then, using either your hands or a knife and fork, shred the chicken.

Once the French fries are fully cooked, place them on a large platter. Scatter the shredded chicken on top on the French fries, and then scoop the sour cream and salsa on top. Finish it off by placing the sliced avocado right on top. Serve immediately.

These are best made and eaten right away. (They are not as good made in advance).

Makes: 6-10 servings
