Garlic Rosemary Cauliflower Mash

As I’ve learned how to cook more and more dishes, I have loved learning simple tricks to make staple recipes healthier! One of my favorite dishes, and favorite Thanksgiving sides, is delicious mashed potatoes.

I have always heard mention of how mashing cauliflower can be just as delicious, but had never tried! I made these Garlic Rosemary Mashed Cauliflower and was surprised at how much I loved them, and just how easy they were to prepare.

These were so creamy and delicious, and shockingly easy. I used a blender to make them extra smooth, or a food processor would also work. Your guests will never know that they’re healthy! Yum!

  • 1 large cauliflower, chopped into small florets
  • 3 ounces low fat cream cheese
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoon minced garlic
  • 1 tablespoon fresh rosemary, chopped into small pieces

Bring a medium pot of water to boil. Once boiling, cook the cauliflower for 8-10 minutes or until fork tender. Remove and drain cauliflower.

Place cauliflower along with all other ingredients into a blender or food processor and pulse until smooth and creamy.

Makes: 4 Servings
