Boozy Champagne Dessert: Mimosa Popsicles

I’m boycotting winter; I’m going to pretend it’s not 30 degrees outside, and that it’s not snowing. As part of my protest, I’m going to make popsicles – boozy popsicles. Made with champagne, which is perfect for any celebration!

I can’t believe I have waited my entire life to make Boozy Mimosa Popsicles. These were so delicious, and were incredibly easy, just like regular mimosas. I chose a variety of juices and each one was different and yummy! I have to say though, there’s just something about champagne and orange juice. The Orange Mimosa Pops were my favorite; it's such a classic combo. Those Apple Cider Mimosa Pops were a close second, though!

If you're like me and totally sick of winter, make these and pretend it's summer again. Or, make a batch to serve as an unexpected to your party guests! It's a fun way to enjoy your champagne, and get a dose of Vitamin C, too! 


  • A variety of fruit juices. I used Orange, Blueberry, Strawberry, Apple Cider, and Pineapple. Any juice would be delicious. Next time I want to try tart cherry, grape, mango…the possibilities are endless!
  • Your favorite champagne
  • Popsicle molds

In popsicle molds, pour champagne half way up each mold. Allow the bubbles to subside. Add more to get to half of the mold if necessary.

Top each mold with the juice of your choice.

Freeze for at least 6 hours, preferably overnight. Serve cold and pretend it’s still summer. Enjoy!
